Xanthan gum is a popular thickener used in various food products, such as seasonings, sauces, pickles, and ready-to-eat pouch meals. It’s also commonly added to frozen foods to enhance freeze-thaw stability by preventing syneresis and texture deterioration caused by ice crystals.
Despite its benefits, xanthan gum has a stringy consistency, which can create a slimy texture and reduce overall appeal, even in small amounts. Additionally, its thickening performance can be affected by pH levels and salt content, making it difficult to consistently achieve the desired viscosity.

To overcome these challenges, our company developed "ROOKIE GUM RISE (HL)", a modified xanthan gum created with our proprietary processing technology. This innovative thickener offers improved resistance to acids and salts, providing higher viscosity and reduced stringiness compared to traditional xanthan gum. Its advanced hydration properties deliver excellent freeze-thaw stability and emulsion stability. Additionally, when paired with galactomannan, it enables precise control over gel elasticity and softness, allowing for customized gel strength in products like jellies.
